We make our oil from olives of the Arbequina and Picual varieties.
We harvest them by hand and grind them the same day. They are cold-pressed to achieve the desired low level of acidity.
The production of our extra virgin olive oil follows a careful process that highlights the quality of the product. Here's a summary of the main stages:
Harvesting: The olives are harvested by hand or with machines, generally between October and December, seeking to ensure that they are at their optimum point of ripeness.
Cleaning: Once harvested, the olives are cleaned to remove leaves, branches, and other impurities.
Milling: The cleaned olives are crushed in a mill, turning them into a paste. This process releases the oil contained in the cells.
Whipping: The paste is gently whisked to facilitate the extraction of the oil, allowing the small drops of oil to come together.
Extraction: The oil is separated from the paste by mechanical methods. Traditionally, presses were used, but today centrifuges are used, which are more efficient.
Decanting and filtering: After extraction, the oil is left to stand so that impurities settle to the bottom. Then, it is filtered to obtain a clean oil.
Storage: The oil is stored in optimal conditions, in dark and cool tanks, to preserve its quality and prevent oxidation.
Packaging: Finally, it is packaged in bottles or cans, making sure that it is well protected from light and air.
This artisanal and careful process is what guarantees the high quality and distinctive flavor of our extra virgin olive oil.
