At Son Matge, we carry out all the olive harvesting manually, thus guaranteeing a traditional and careful process that respects the quality of the fruit as much as possible. To prevent the olives from coming into direct contact with the ground, we place nets on the terraces, so that the olives fall in a clean and controlled environment. In addition, we use manual vibrators that facilitate the fall of the olive without damaging the tree, which is essential to preserve its health and ensure future harvests.
Once the nets are full, we carefully pick the olives and place them in ventilated boxes. This allows for proper aeration and prevents fruit deterioration during transport. These boxes are immediately taken to the oil mill for pressing, thus ensuring that the olives remain fresh and that the oil retains its ideal organoleptic characteristics.
This artisanal method not only preserves the quality and flavor of our extra virgin olive oil, but also reflects our commitment to sustainability and respect for Mallorcan tradition. At Son Matge, each stage of the harvest is essential to create an oil of the highest quality, protected by the Oli de Mallorca Designation of Origin and the Serra de Tramuntana seal - World Heritage.
Son Matge oil is carefully made from two selected olive varieties: the Mallorcan and the Picual. Each one provides unique characteristics that, when combined, create an extra virgin olive oil with a balanced flavor and full of nuances.
The Mallorcan variety is distinguished by being a mild and sweet oil, with a light spiciness that adds a subtle and pleasant touch to the palate. On the other hand, the Picual variety offers a more robust profile, with a spicy and slightly astringent character, along with fruity notes that provide freshness and complexity.
By making the coupage of both varieties, we obtain an olive oil with an intense fruitiness and a medium spiciness. This combination enhances the best qualities of each variety, resulting in a balanced oil that stands out for both its aromatic intensity and its unique flavor.
Our oil is produced by a cold extraction process, in which the temperature does not exceed 27ºC. This method allows the aromas, flavours and nutritional properties of the oil to be preserved to the maximum, guaranteeing a final product of superior quality. Cold extraction ensures that every drop of our oil retains all the benefits of the olive, including its antioxidants and essential fatty acids.
Son Matge oil is ideal both to taste raw, as well as in salads or toasts, where you can appreciate its fresh and fruity aromas, as well as to enhance the flavour of Mediterranean dishes.
Our yield is 16%, for every 100 kg of olives we obtain 16 litres of oil.
This is due to the fact that we look out for quality and harvest the olives at their peak of ripeness.
