Ferrerico organic sobrasada
Elaborated following traditional methods with totally organic ingredients, cured slowly thanks to the ideal climate that we have in our lands.
The elaboration process begins by collecting the cereal from our fields, which are certified as organic, with which we feed our own herd. Combining this diet with the natural pastures of our lands and with organic flours; allowing the pigs to graze freely on the grounds. All this process provides us with the best and healthiest organic meat, which is the basis of some of the best and most recognized of our products.
With these methods, an optimal final fattening of the animal and a sufficient level of fat to reach the desired level of muscle infiltration are achieved, in addition to providing our sobrasada with that characteristic and appreciated aroma. At the same time, the physical exercise performed by the animal in search of the best pastures, slows its fattening, strengthens its muscles and achieves a greater infiltration of fat in them, thus obtaining juicier meats.
In the manufacturing process, the typical and original paprika of traditional recipes is incorporated into the meat, the "tap de cortí", rich in vitamin C, and very important for conservation in the curing period, in addition to providing the aroma that takes us back to the original flavor of the Ferrerico sobrasada.
Ingredients: Organic pork, organic pork bacon, sweet paprika, salt and natural pork gut.
Organoleptic characteristics: irregular cylindrical shape, according to the mofology of the casing. Dark red surface, slightly rough. Soft paste interior, non-elastic, spreadable and little fibrous. In the mouth it has some granulosity, a high deformity and adhesiveness. Characteristic aroma and flavor with a clear perception of paprika "tap de cortí".
It can be eaten naturally since it has overcome its healing process. It is suitable for use also cooked on the grill, fried and baked and can be applied in recipes for example, in fish fumet, albondigas, any type of cooked recipe.
It is an ingredient that has always been used in cooking typical recipes of the region and this for its high quality is highly appreciated by renowned chefs who use it in their recipes.
