FERRERICO ORGANIC SOBRASADA
Prepared following traditional methods with completely organic ingredients, slowly cured thanks to the ideal weather that we have in our lands.
Collecting the cereal from our fields, which are certified organic, with which we feed our own herd. letting the pigs graze freely.
All this process provides us with the best and healthiest organic meat, which is the basis of some of the best and most recognized products of our town.
In the manufacturing process, the typical and original “tap de cortí” paprika, rich in vitamin C, and very important for curing the sobrassada, is incorporated into the meat.
In the first place, the minced meat (jowl and flank) is done separately
The skirt and chin are distributed in the necessary proportion.
We mix the spices, salt and additives, and mix everything with the minced meat. until you get a creamy and consistent dough.
We introduce the resulting paste into the stuffer and the process of filling the natural casings is carried out.
These are manually sewn, tied, and covered with black pepper for greater protection and hygiene.

Once cured it is ready for consumption. It is excellent both natural spread on bread or oil biscuits, fried, grilled. It is also an excellent food ingredient.
