ELABORATION
The production process begins with the manual harvest with boxes first thing in the morning at the end of August, beginning of September.
A film maceration is carried out in a pneumatic press for about 12 hours to promote the extraction of aromatic components. Static racking is carried out and alcoholic fermentation begins in stainless steel tanks.
The wine is transferred to French oak barrels, maintaining its aging on the lees themselves for three months.

Mole and Chardonnay
TASTING NOTES
Yellow color with greenish reflections. Clean and shiny appearance.
Aromas of tropical fruit, banana, white fruit, along with light balsamic, spicy, vaini la, coconut, fruit of barrel fermentation.
Soft and fresh entry, balanced acidity. Unctuous, intense mouthfeel, highlighting creamy sensations, ripe fruit, citrus, notes of butter, yeast.
SERVICE AND PAIRING
Serve between 5 and 6ºC.
Ideal to combine with white meats and baked fish.
