Cheese with a maturation of 8 to 15 weeks and an average weight of 2.9 kg.

Colour (inside): Ivory yellow.

Characteristic smell of fresh milk.

Flavour: Mitigated acidity nuances and slight lactic reminiscence.

Texture Firm texture and full cut.

Shape Parallelepiped square base: edges and edges rounded.

Ingredients

Raw cow's milk, salt, rennet, milk ferments and lysozyme (contains egg). In crust: olive oil.

Retention requirements How to use

Keep at a temperature between 2 ºC and 8 ºC Direct consumption, without processing. It is recommended to serve

room temperature.
