With this wine we intend to show the great potential of the oldest vines of the native Mantonegro variety. Made only in exceptional harvest years. The deep roots of the vines planted in 1961 give the wine the characteristic terroir of the vineyards of Santa María del Camí and offer a complex, mature and elegant wine, with a great fruit expression. With this wine we want to show that Mantonegro has nothing to envy to other international varieties and that it can battle with anyone.

ELABORATION

Manual harvest in the vineyard. Selection at the table, cluster by cluster, where only the best bunches are accepted. Fermentation is then carried out at temperatures between 25 and 28º for about 35 days in order to extract the maximum expression from the grape. Aged in two 500-litre French oak barrels for 12 months and 3 more months in the bottle.

TASTING NOTES

- View: Cherry red with a garnet edge.

- Nose: Ripe red and black fruit. Notes of cocoa and liquorice, toasted aromas from new barrels.

- Mouth: Very fine, complex, suggestive, broad entry on the palate. Consistent and friendly, medium-high body, with nerve, powerful, expressive and long.

- Pairing: Grilled meats, game meats, delicate stews, cured cheeses, Iberian ham. Perfect with high purity chocolate in cocoa.
