ELABORATION:

Manual harvesting in 12 kg boxes and selection of grapes in the vineyard itself. Delicate destemming and second selection of grapes. Pressing light without exceeding 1 kg of pressure. CO2-inerted process to preserve varietal aromas and delicate compounds from oxidation. Static racking in isothermal tanks at 24-48 h and fermented in stainless steel tanks. Temperature control throughout the process. Resting on fine lees for 4 to 6 months

TASTING:

- Color: Straw yellow with green reflections, clean and bright.

- Aromas: High intensity with peach aromas and lactic touches reminiscent of pineapple yogurt. Background of Mediterranean dried herbs such as chamomile and fennel.

- Taste: Fresh entry with volume, medium acidity. Unctuous and pleasant finish, in retronasal the aniseed touches return.
