José L Ferrer Crianza red wine, symbol of Mallorca since 1931 with the characteristic touches of the Mantonegro de Binissalem and a 12-month aging in barrel.
Mantonegro, Cabernet Sauvignon, Tempranillo, Callet and Sirah
ELABORATION
The harvest of the varieties that make it up begins with the Temprani at the end of August and ends with the harvest of Cabernet Sauvignon and Mantonegro in the last week of September. From these varieties, refrigerated in a cold room at 2ºC, a pre-fermentation maceration is carried out with the ho for about 4 days to extract aromatic components and color. After this process, fermentation is carried out in the concrete tanks of 1931 at a temperature of between 27 and 28ºC. At the end of malolactic fermentation, the wine is transferred to the American and French oak barrels where it remains for 12 months until it is bottled, where it will finish aging until it reaches a total of 24 months.
