José L Ferrer Reserva has been an emblematic product of Mallorca since 1931. It is the maximum expression of the Mantonegro variety and has been aged for 15 months in new American oak barrels. The varieties used are Mantonegro, Callet and Cabernet Sauvignon, which bring complexity and balance to the wine.
ELABORATION
The harvest of the varieties that compose it is basically carried out during the second half of September, a period during which the native Mantonegro and Calet are harvested. From these varieties, refrigerated in a cold room at 2ºC, a pre-fermentation maceration is carried out with the skins for about 4 days to extract aromatic components and color.
After this process, fermentation is carried out in the concrete tanks of 1931 at a temperature of between 27 and 28ºC.
At the end of malolactic fermentation, the wine is transferred to the American oak barrels where it remains for 21 months until it is bottled, where it will remain for a minimum of 15 months before being marketed.
